Pumpkin spice latte with Miffy-mallows 

It’s the time of the year to get cosy. Miffy’s ideal autumnal set up is some big cuddly slippers, a chunky blanket, and a soothing hot beverage in her hands. So, she’s here to share her recipe for the perfect pumpkin spice latte, with an added sprinkle of Miffy’s signature charm! Get ready to brew up some autumn magic with this adorable Miffy-themed latte. 

Ingredients 

For the latte: 

  • 500ml milk whole, almond, oat, or soya (take your pick!) 
  • 120ml strong brewed coffee or espresso 
  • 60g pumpkin purée 
  • 50g sugar (adjust to taste) 
  • 1/2 teaspoon (1 gram) pumpkin pie spice 
  • 1/2 teaspoon (2 grams) vanilla extract 
  • Whipped cream (optional, but highly recommended!) 

For the Miffy decorations: 

  • Mini marshmallows 
  • Cooking chocolate 
  • A pinch of cocoa powder or cinnamon (for drawing) 

Instructions: 

  1. In a small saucepan over medium heat, combine the pumpkin purée, sugar, and pumpkin pie spice. Stir continuously until the mixture is well blended and starts to bubble slightly. Add the vanilla extract and continue stirring for another minute. Remove from heat and set aside. 
  1. Heat the milk in a separate saucepan or in the microwave until hot but not boiling. If you have a milk frother, this is the perfect time to use it! Froth the milk until it’s light and bubbly. If you don’t have a frother, a whisk or a blender will work too. 
  1. Brew your strong coffee or espresso. If you’re using a coffee machine, make sure it’s set to your desired strength. 
  1. In your favourite mug, combine the hot coffee and pumpkin spice syrup. Stir well to blend. Slowly pour the frothed milk over the coffee mixture, leaving room for a dollop of whipped cream if you’re using it.   1. Now for the fun part – decorating! Melt your cooking chocolate in the microwave. Dip a cocktail stick into the chocolate, and use as a paintbrush to draw adorable, chocolatey Miffy faces onto the mini marshmallows! Make as many Miffys as you like and then, if you’re feeling extra creative, you can use a fine mesh sieve to sprinkle a little cocoa powder or cinnamon to draw a tiny heart or star around your Miffy marshmallows.
